I think the sandwich is underrated. A really well-crafted sandwich is a thing of beauty and can be extremely tasty.
Especially in the summer, when the temperatures are (usually) warmer, I don’t always want to cook. So a sandwich is a great compromise.
This month, my Kraft Canada What’s Cooking creation features the simple sandwich, and yet, it’s fully of great taste. I’ve made a twist on my usual mayo (or in this case Miracle Whip) sandwich topping by adding strawberry-rhubarb jam. Yes, you read that right. The tartness from the rhubarb, combined with the tang from the Miracle Whip and sweet from the strawberry was delicious and reminded me of when I add cranberry sauce to my turkey sandwich after Christmas or Thanksgiving.

You can mix up this recipe anyway you like, by cooking the chicken on the BBQ (or better yet, using left overs) you’d end up with a much smokier flavour. Add veggies or cheese if you prefer or switch up the bread choice; the opportunities are endless.

Chicken Salad Sandwich with Strawberry-Rhubarb Mayo
Ingredients:
3 tbsp Mayo or Miracle Whip
1.5 tsp strawberry-rhubarb jam
Pepper
2 chicken breasts, cooked, cubed
Lettuce
Multigrain Bread
Directions:
In a bowl, combine the mayo, jam and pepper. Mix well.
Add all but 2 tsp of the spread to the chicken. Toss to coat all the pieces.
Toast the bread and top with chicken mixture. Top with a few pieces of lettuce. Add a tsp of the spread on the other piece of toast to finish the sandwich (this will help the top piece stick to the lettuce!)
Serve and enjoy!
