Recipe: Corn Muffin Kinda-Quiche
Using left over corn muffins, (I use the PC Organics pre-mix box, it makes about 24 muffins so after a couple meals, there’s leftovers) this kinda-quiche turns into a wonderful, new breakfast or lunch. Enjoy!!
Ingredients:
5-8 corn muffins, halved
1 cup spinach, chopped
1/2 cup cream
4-6 eggs (use 4 eggs for more ‘bread’, 6 for bit more ‘egg’)
1 cup shredded cheese
chopped fresh chives
1/2 cup diced tomatoes
1/4 cup diced peppers (optional)
Salt and pepper to taste
Directions:
1-Place the halved corn muffins in a square pan. Break into pieces and make fit if there are extra.
2-Mix remaining ingredients.
3-Pour over corn muffins.
4-Bake 400 degrees for about 20-30 minutes, or until egg is completely cooked and set.
