Recipe: Using Ripe Bananas 2 Ways

Thanks to Vicky from Some Kind of Wondermom who was looking for a new banana bread recipe, I decided to post my 2 go-to ways of using ripe (or frozen) bananas.

The first is a banana loaf.  It’s sweet, incredibly moist and a crowd pleaser for adults and kids.  It’s the recipe I make the morning of a play date because it’s quick and requires few dishes.

The second is a recipe my sister had for years for chocolate chip banana muffins.  I don’t think I’ve had a better banana muffin.  The secret ingredient?  Miracle Whip.  These were my midnight nursing snacks when I had the kids!

Banana Loaf

Ingredients:

3 ripe bananas

1 cup sugar

1.5 cups flour

1 tsp baking soda

2 tbsp melted butter

Directions:

1-Combine the sugar and bananas until mixed through.

2-Add remaining ingredients and mix, adding melted butter last.

3-Add to greased loaf pan

3-Bake for 45-60 minutes at 350 (Mine is done within the 45-50 min mark)

Banana Chocolate Chip Muffins

Ingredients

3 ripe bananas

1 cup sugar

1 cup miracle whip

2 cups flour

2 tsp baking soda

1 package chocolate chips (I sometimes use less.  Also, milk chocolate is good but semi-sweet is best.  It offsets better with the sweetness of the banana and sugar)

Directions:

1-Mix bananas, sugar and miracle whip

2-Add flour and baking soda

3-Add chocolate chips

4-Bake in lined or greased muffin tins for 15-17 minutes at 375
