Recipe: Easy Tilapia with an Orange Reduction

We love to eat seafood and fish.  I’ve finally mastered a fish recipe for Tilapia. It’s a light, white fish that doesn’t taste ‘fishy’ so I don’t need to do much to it.  This does make it a bit fancier.

Ingredients:

Olive oil

Butter

2-4 Tilapia Filets (fresh)

1 cup stock

1 cup orange juice

1 tsp ginger

1-In frying pan, add olive oil and melt about 1/4 cup of butter.  Add fish and let brown over medium heat until nearly cooked through, (flipping once or twice) and they start to get a little crispy/golden brown.

2-Place fish in baking dish and bake at 350 for about 5-10 minutes to finish cooking through.

3-Meanwhile, drain frying pan.  Put back on heat and add ginger, stock and orange juice.  Reduce until about 1/4-1/2 cup is left and you have a dark, thickening sauce.

4-Remove fish and plate.  Pour even amounts of sauce over fish.  Serve with rice or cous-cous and veggies.
