So my Sunday night tradition is to indulge in treats or baked goods with a cup of coffee before Game of Thrones. I have been calling it my ‘pre-Game of Thrones treat’ and usually we stop at a bakery at some point in the weekend to pick something up.
Sometimes, I make it myself – because, I am a creature of habit and this new tradition is a must (and note: the treat is always after the kids are asleep. It’s just for Andy and I while we emotionally prepare for the show).
Last week, at 4 pm, I realized I hadn’t secured my usual treat so I set out to make one. I landed on the most delicious gingerbread cake recipe but changed the icing to be lemon cream cheese frosting. It was so delicious (although I am a huge fan of ginger and molasses together!).
Just in case you may want to try some, here’s the link to the recipe – it was whipped up and made within an hour. Hard to beat!
Icing (approximate – I kind of just threw everything into the mixer): about 1/2 cup cream cheese, 2 tbsp butter, 1 cup icing sugar (add more icing sugar if needed), half lemon squeezed, zest of lemon.
And I think my Sunday night tradition will continue – next up will be my pre-True Blood treats 🙂

Looks delicious and I love the sound of that lemon cream cheese frosting. I love gingerbread as cakes and cookies but typically only bake it at Christmas time. Silly to not indulge in this wonderful treat year round.
