Recipe: S’Mores Cookies

Each year for Thanksgiving we end up with pumpkin pie – naturally – and usually one other dessert. I love pumpkin pie, but it’s not for everyone (apparently). My kids are hit and miss with pie. I know, that’s a confusing statement, because PIE but still, they don’t love every kind.  I usually try to make sure we have a fun dessert for the kids at our table too.

The summer may be gone, but not forgotten.  I had left over s’mores parts in the cupboard and decided a simple way to convert them into a Fall recipe would be in the form of a cookie. Enter the s’mores cookie.  All the part of a s’more, plus delicious cookie dough.  It’s hard to resist.

S’Mores Cookies

Ingredients:

1/2 cup cold butter, cubed/grated

1 tsp vanilla

1/2 cup sugar

1 egg

1 tsp baking powder

1 cup flour

1/2 cup chopped graham cookies

1/4 cup chopped chocolate bar (or chocolate chips)

4 marshmallows, cut into threes

Directions:

1- Combine butter, vanilla and sugar until blended.  Add Egg.

2- Add baking powder and flour.  Mix until well combined.

3- Add graham chunks and chocolate.

4- Scoop onto parchment lined cookie sheet in round forms, about a tablespoon or so each.

5- Top with marshmallow piece (want more gooey goodness? Cut marshmallows in half instead for larger amounts)

6- Bake at 375 for 12 minutes, until the marshmallow and cookie edges are browning.
