Last night for supper I had a package of chicken thighs waiting to be cooked up and since it was about 3 pm before I finally decided to do something for supper, I couldn’t use the slow cooker (my usual chicken thigh go-to).
A quick internet search led to this Yummy Mummy Club recipe. I had most of the ingredients (I’m notorious for fudging recipes and replacing ingredients when I don’t have everything. Oh well!) and it seemed quick and tasty so I gave it a try.
It was super easy to make (I subbed sesame oil and the type of vinegar) and it was really tasty. I mixed up a corn/jasmine rice mixture to serve under it. I would definitely make it again!!
