Rice is an easy side dish for us. I find it’s wonderful when it’s plain with a bit of butter, paired with maple syrup for a sweet treat or herbed up to become a perfect accompaniment to our main course.
Tonight’s rice was jazzed up thanks to one of my new favourite things in the world – coconut. In this case, coconut milk. I added some orange zest and juice and voila. An easy, 15 minute side dish that was delicious. I served it with peas and poached salmon. NOM.

Orange Coconut Jasmine Rice (serves 2)
Ingredients:
1/2 dry jasmine rice
1 cup water
1 small can (150 ml) coconut milk
1/2 orange
orange zest
Directions:
Combine rice, liquids, orange zest from most of the orange and the juice from a squeeze of the orange into the bowl to microwave rice (or, follow the directions you normally use to make it on the stove top).
Cook as per instructions, stirring half way. You likely will need to add a few more minutes of cooking time to finish it off (usually about another 5 minutes). Or, cook until rice has softened.
Top with a bit more orange zest.
Serve with your favourite fish or main course.
