When I discover a new recipe that I instantly fall in love with, I can’t help but share it.
Recently, thanks to the power of random Facebook videos, I discovered a quick Jamie Oliver recipe video where he was making a roast chicken and serving it over pasta. I stopped and watched the entire video and instantly told Andy I was planning to make it.
It only took me until the next grocery trip to get the ingredients.
Basically, he uses garlic, basil, thyme and balsamic vinegar along with some water and juice from the chicken to create this dish with simple ingredients that absolutely taste incredible.
Using fresh pasta, a small chicken to roast and the herbs and tomatoes meant that this was an easy dish to create on a weeknight. While it seems complicated and fancy, it ultimately was simple and relied on the ingredients to speak for themselves.
