A couple of years ago after Easter, I picked up a bunny cookie cutter on sale. It has turned out to not only be great for Easter cookies, but is the perfect size to cut crust off of sandwiches.
We made these easy sugar cookies the other day and I let the kids decorate them with icing however they wanted (read: tons of icing randomly globbed on the cookie).
Then I made some bunny cookies with marshmallow tails.
This is a perfect, fun and delicious activity to do with the kids. They can even help you put the ingredients together!
Ingredients for cookies:
- 1 cup butter
- 1/2 icing sugar
- 2 tbsp brown sugar
- 2 cups flour
- 1 egg
Directions:
Mix together and shape the dough into a ball. Roll out to about 1/4 inch thick. Cut shapes. Bake at 300 degrees for 25 minutes, or until desired firmness.
Once the cookies have cooled, ice them with coloured icing. Add extra icing at the tail and marshmallows on top for a fluffy tail!
For the icing: I mix together vanilla, butter and icing sugar. I have no specific amounts, just enough to cover the cookies I make at the time!
The kids must have loved eating the bunny tail (very cute idea)!
