Sometimes, on hot summer days, I have no desire to cook something hard for supper. Worse, some days my appetite disappears in the heat.
That’s why I *love* this quinoa salad recipe. My friend Gwen told me about it and it’s been a hit ever since. It’s full of veggies and is a great vegetarian option (something we like to do a few times a week).
The recipe is easy to modify – I add whatever veggies I have on hand (for asparagus and beans, I cook them quickly in water first until just tender.) There’s no right or wrong way!
