Confession: I love meatloaf. I think it’s an underrated food.
This recipe is really close to the meatloaf recipe my mom made for us when we were growing up. It’s super simple, can be made in a flash and is something the entire family can love.
Mom’s Meatloaf
Ingredients:
-1 package lean or extra lean ground beef
-1 egg
-chopped onions for 1 tbsp onion powder
-3/4 cup oats (or panko or bread crumbs)
-1 garlic clove, chopped, or 1 tsp garlic salt
-1 tbsp oregano
-ground pepper
Also:
1/3 cup brown sugar
2 tbsp mustard (grainy dijon works well!)
3/4 cup ketchup
- In a bowl combine sugar, ketchup and mustard. Set aside.
- In another bowl, combine meat, egg, seasoning and oatmeal. Add 1/3 of the ketchup mixture and combine. Press firmly into loaf pan.
- Top with remaining ketchup mixture.
- Bake at 375 until it’s cooked through according to your meat thermometer (usually about 45 minutes).
- When cooked through, remove from oven and let rest for 10 minutes. Cut and serve!
