I love meals that can be served for breakfast or dinner.

This egg croissant sandwich fits both of those criteria and is delicious on top of that!
The ingredients can be swapped around to suit what’s in your fridge and pantry, and this can be made in about 15 minutes, making it an excellent option for busy week nights.

Egg Croissant Sandwich with Honey Mustard
Ingredients (serves about 2):
4 eggs
splash of milk
1/3 cup chopped roasted red peppers
1/3 cup chopped leeks or green onions
salt and pepper to taste
For Sauce:
2 Tbsp honey
3 Tbsp mustard of your choice
Directions:
In sauce pan, cook the onions and red peppers until soft.
Add eggs and milk. Scramble and stir until cooked through.
Combine the honey and the mustard.
On a croissant spread some of the egg. Drizzle with mustard sauce.
