Somewhere along the way Brussels sprouts became the ‘worse vegetable in the history of vegetables’. We use Brussels sprouts as a bad thing – ‘oooh, if you aren’t careful I’m going to make you eat Brussels sprouts!’. I know adults who flat out refuse to look at them, let alone eat them.
They weren’t a veggie option in my house growing up. There was no ‘eat your Brussels sprouts young lady!’ because we never had them. I suspect my mom’s own dislike for them is the reason why.
Flash forward to my adult years and it’s only been in the past few years that I’ve ventured to try cooking them and eating them more. Turns out? I love them. I’ve even ordered them at restaurants. My husband and I are both huge fans (although the kids really really don’t like them.)
How to cook them was something that I needed to figure out. I have discovered that the best way for me to enjoy them is by slow roasting them. They need to not get too soft, and the edges should crisp just a bit. By letting them develop a nice caramelization on them, the flavours are at their best.
Steamed, soft Brussels Sprouts wouldn’t appeal to me. But these roasted ones can be on my plate any day.
Go ahead and try them and see if you might change your mind about the poor Brussels sprout.
- Brussels sprouts
- salt, pepper
- olive oil
- Slice Brussels sprouts in half and place them in a roasting pan/dish
- Toss with a couple tablespoons of olive oil and turn them with their middles facing up
- Add a generous amount of salt and pepper
- Roast for about 40-50 minutes with the oven at 350 degrees, or until the sprouts are softer but still somewhat firm and have developed crisp browning around the edges.

I admit to loving brussel sprouts! I substitute olive oil for coconut oil sometimes – yum!
I am right there with you! We never ate these growing up but now I eat them once every week or 2 and roasting is totally the way to go. Your recipe is the same as mine except the time and temp…yours is considerably longer at a lower temp – I will try that next time and see how they are different. Thanks!! #typeaparent
I have grown to like Brussels sprouts over the years but I think if my Mum had roasted them that I would have started liking them a lot sooner! Nice simple recipe.
my kids still aren’t on board 😉 but roasting them makes me love them!
