I scream, you scream, we all scream for ice cream!
Tell me as a parent you’ve said that at least once. Isn’t it a requirement? ‘Tis the season where we eat far too much ice cream and make few apologies for it. Ever since I got my own ice cream maker, I’ve been even more interested in creating tasty treats.
This recipe is so basic yet everyone really loved it. With only four ingredients, there’s a chance you can make it right now! The kids helped me make this one too!
Coconut Chocolate Chip Ice Cream

Ingredients
- 1 regular sized can (or 2-3 small cans) coconut milk
- 1/4 cup sugar
- 1 tsp vanilla
- 1/3 cup chocolate chips (mini would work best!)
- toasted coconut – optional
Instructions
- In a small sauce pan warm the coconut milk and sugar until the sugar is dissolved.
- Add the vanilla.
- Let cool in the fridge.
- Add to your ice cream maker and churn as directed (about 20-30 minutes)
- Towards the end of churning, add chocolate chips until well mixed.
- Transfer to a freezer bowl.
- Let harden in the freezer until serving time.
- Top with toasted coconut (I didn’t do this, my kids would probably riot)
- Enjoy!
