Forget store bought ice cream sandwiches – make homemade ice cream sandwiches with the kids! Bake your own cookies and use your ice cream maker to make your favourite vanilla ice cream. OR, just buy the ice cream and cookies and assemble. It was an easy recipe that they really enjoyed putting together – and eating! These would be great for playdates and summer parties.
This recipe makes 6 large sandwiches. Make smaller cookies for a more reasonable portion!
Homemade Ice Cream Sandwiches:
For the ice cream:
Use your favourite ice cream maker recipe (vanilla is always a hit) or purchase your favourite brand!
Cookies:
1/2 cup butter
2/3 cups sugar (I used golden cane, but a brown sugar would be nice!)
1 egg
1 tsp vanilla
1 cup flour
1 tsp baking powder
1/2 cup cup chocolate chips (I used a combination of two kinds!)
Directions:
Blend the sugar and butter until creamed.
Add egg and vanilla. Mix well.
Add flour and baking powder until all mixed together.
Pour in chocolate chips.
Form round balls on a cookie sheet. Flatten slightly with the back of a spatula.
Bake at 375 for about 14 minutes (or until golden brown and somewhat firm.)
Allow to cool completely.
TIP: Forget the baking altogether and use delicious, soft grocery bakery cookies!
To Assemble:
Add about 1/3 cup ice cream to the back of one cookie. Squish it with another cookie on top. Use the back of a spreader or spoon to smooth out and fill in the edges.
Optional: Roll in sprinkles.
I wrapped each one in wax paper and stored in a freezer safe container.
