Every month or so, I host dinner for my sister, her boyfriend and my brother who all live in Ottawa. It’s a chance for them to see the kids, visit with us and for me to try new recipes. They are great to cook for because they seem to love everything.
I usually chose recipes that are either new and I need to experiment or one that I tried for hubby and I and that we love. I also try to do ones on a budget at times since feeding 5 plus people can get expensive with certain meat especially.
Tonight on the menu: Bacon and Scallops Pasta. It sounds fancy schmancy but it’s quite easy to do (about 30 min) and tastes fantastic. This recipe comfortably serves 4, but with salad and dessert I’m going to make it stretch tonight. One of the best parts? This meal costs about $4 a person – if that.

Bacon and Scallops Pasta
Ingredients:
Bacon, about 10 slices
Scallops (recommendation: a package of President’s Choice frozen Argentine Scallops, $6.99 for the package)
1/2 – 1 brick cream cheese
2 cups fresh, chopped spinach
1 box pasta
Directions:
- Boil Pasta
- Meanwhile, cook bacon, set aside to cool slightly
- In same pan that bacon was cooked in, fry scallops until cooked through – drain when complete.
- When pasta is done, drain most of the water, reserving about 1/2 cup water in pot.
- Chop bacon in small pieces
- Stir in chopped spinach. The heat from cooking water will help cook spinach.
- Add 1/2 brick cream cheese. Continue to add more up to desired creaminess.
- Add bacon and scallops.
- Serve and enjoy!!
