Recipe: Mussels served in a Garlic and Bacon Cream sauce

As part of my family’s dinner last night, I decided to add an appetizer.  I chose Mussels in a Garlic and Bacon Cream sauce.  Sounds pretty fancy but really this is an easy one!

The result:  Only positive reviews – everyone wants these to make a return to the dinner table soon.

Mussels in a Garlic and Bacon Cream Sauce – Ingredients

  • 2 pounds mussels (they often come pre-bagged in this size)
  • 4 slices bacon, cooked and chopped
  • 1 garlic clove, fresh
  • 1 cup cream

1-Cook bacon.  Set aside and drain.  With the bits and small amount of grease still in pan, add garlic, cook briefly on low heat.  Add cream and chopped up bacon.

2-Steam the mussels in a large pot with lid in a small amount of white wine or water.  This will only take a few minutes (about 5-10 min) and the mussels will fully open when cooked (ensure they are fully cooked). 

3-Put mussels in individual serving bowls.  Spoon sauce over each bowl of mussels.

Consider serving with a fresh loaf of crusty bread to soak up the last of the sauce.  Recommended wine:  Ontario Riesling.  Try the Cave Spring Cellars Off-Dry Riesling.
