I love leftovers. There I said it. They appeal to me on so many levels. First, I have no work to do to prep for supper, except a little time to microwave/re-heat and maybe make a salad. Second, it’s cheap. And, quite frankly, some food is just better the next day!
Leftovers make life easier. I never understand when people tell me they don’t like leftovers. Ever have left over chili? You know it’s better the next day. And busy parents need some nights of the week when they just don’t have to cook from scratch – and sometimes turning to a box in the freezer isn’t the best options. Enter leftovers.
Remember my supper from Mother’s Day? We had some left over BBQ steak and broccoli. Last night’s supper: Spaghetti.
Tonight’s new supper: Steak Spaghetti with broccoli. What?! Weird sounding? Maybe, but it tasted good, took 6 minutes to heat up, there are no dishes to do but the containers the food was in and our plates, and I helped clear out the fridge. VOILA!
We typically use our leftovers for lunches. My advice: Buy aluminum, lunch sized containers, the ones with cardboard lids (found at most grocery stores) and put your leftovers in those and freeze. They’re a cheaper version of the Lean Cuisine boxes and better for you!
