Warm up on a cold winter day and get all the healthy benefits of green vegetables with this Broccoli soup! Please pardon the constant use of estimating – I seriously made this up on the fly at lunch one day when everyone was down and out with colds. The final verdict though? A hit!
Ingredients:
4 cups vegetable or chicken broth (I had homemade turkey broth)
2 heads of broccoli
1 small onion, chopped
1 clove garlic, chopped
1 cup cream
Olive oil
Cheddar cheese (sharp, old preferred)
Directions:
1-In soup pot, add a few tablespoons of olive oil and the onions. When onions are becoming translucent, add garlic.
2-Add broth until heated through. Add cream and broccoli.
3-Continue heating with lid on, until broccoli is very soft. Let cool a bit.
4-Using hand blender (or, a full blender for a smoother puree), blend until creamy (add stock if it’s too thick).
5-Season with salt and pepper to taste (optional).
6-Serve with grated cheese on top.
We also ate it with corn bread muffins (PC Organics pre-mix has few ingredients, all of which I can pronounce! Very easy to make).
