Another quick recipe is in the slow cooker waiting when my husband gets home and the house smells delicious. I love this thing! Many of you are asking for the pineapple meatball recipe on Twitter, so I’ll gladly share it. Wish I could say I made it up, but really, it’s modified only slightly from the Company’s Coming Slow Cooker recipe book. Enjoy!
Ingredients:
Meatballs
1.5 pounds ground beef
1/4-1/2 cups bread crumbs
1 egg
finely chopped onions (optional)
Seasoning (pepper, salt, oregano – optional. The Company’s Coming book recommends a bit of ginger)
Sauce
1 can pineapple (pieces, or I used crushed)
1/2 cup vinegar
1 cup brown sugar
3 tbsp soy sauce (I didn’t have any – despite it being on my ‘must have’ list, so I just skipped it. No biggie)
1 tbsp water
1 tbsp corn starch
Directions
1-Make meatballs by combining the meatball ingredients. Roll into balls and place directly in bottom of slow cooker.
2-Make sauce on stovetop by combining the first four sauce ingredients until simmering.
3-Dissolve the cornstarch in the water, then add to the simmering sauce.
4-When it begins to thicken, pour over meatballs in crockpot (or, in my case, when the toddler is desperate for a nap, just pour over meatballs, it will just be a bit more liquidy but still yummy!)
5-Cook on high for 4-5 hours, or low for 6-8.
I’ll be serving it with a salad and jasmine rice.
If my crockpot wasn't already at work, I'd make this right now! It'll have to wait until tomorrow, I guess :).
Okay, now I actually *am* making this right now (it's Friday). It seems really runny. Just for future reference, was I supposed to drain the pineapple first? I just dumped the whole can in, with the juice. Or, was I supposed to use a smaller can of pineapple — I had a 19oz can? Hm.

Man, my grandmomma was from Sicily and she made the most amazing meatballs I ever tasted, like you had died and gone to meatball heaven. Sadly, she died last year and she didnt leave a recipe for us so I’ve been trying to work it out on my own… slowly working my through the meatball recipes here, I still cant figure out what her secret ingredient was though!!!
