So I completely failed on my plans to make mayonnaise this week as I mentioned in my post last week.
I had challenged myself and you to bake/cook something you normally would buy at a store.
With my sister’s wedding shower being hosted here tomorrow, I simply didn’t have the time. However, the challenge wasn’t a complete lost. I experimented with some new recipes that I am really happy with!
In particular, I used phyllo dough – something that I typically shy away from for some reason – I created 3 recipes that I was really happy with.
The first: Apple turnovers.
The second: Goat cheese and chive filled triangles (although I have these in the freezer so I’m not sure what the end result will be I think they seemed nice!)
The third: Phyllo nest brushetta.
Sometimes a little experimentation is intimidating in the kitchen, but other times it turns out to be a wonderful surprise.

I have many new ideas I want to try in the coming weeks. We recently made big changes to the way we eat so I have been having a lot of fun trying out new ingredients and recipes.
This week I am trying out quite a few new things, but the one I am most excited about (and it’s definately not the healthiest!) is a vegan apple strudel. *Drool* 🙂
