It was a little embarrassing, but there I was, walking around the Superstore, when I suddenly exclaimed (to my toddler’s confusion I’m sure) “Ohhhh! Butter is on sale! And WOW what a price!”. Such are the things that excite me now.
But in all seriousness, we are right in the holiday season planning and entertaining mode and butter is crucial for baking. I have various recipes that of course use butter (and there is NO discussion about butter vs margarine. None to be had. Butter all the way). No other recipe brings my butter loving to mind like my grandmother’s shortbread which I make each year.
So now, we have a freezer full of butter (butter freezes so well!) and my mind is spinning in preparation of baking.

Ready, Set, Bake!
I was there too, on Thursday! I bought four blocks (I buy the cultured butter) and by Saturday had gone through THREE of them! I should’ve bought more cause it really does freeze so well.
Darn, I missed the sale! We need to buy more butter and freeze as well! My fav. recipe involves melting a huge chunk of butter in a pan, sauteeing some ginger, then adding red lentils and spinach, and mixing with pasta. It’s a really excellent vegetarian meal, and superbly buttery 🙂
