
I love quick, week night recipes. But I especially love the ones that are so delicious I wish I had made even more.
I finally bought Sesame Oil for my pantry. I know, it’s crazy to think that I didn’t have any before, but I just didn’t. Realizing the error of my ways, I bought some and instantly wanted to create something delicious with it.
I found this Pioneer Woman Simple Sesame Noodle recipe and tweaked it a bit to create our dinner.
The verdict: Loved it. And three out of the four of us ate it 😉
Sesame Noodles and Vegetables (adapted from The Pioneer Woman)
Ingredients:
1/4 cup soy sauce
2 tbsp sugar
2 cloves garlic
1 tbsp white wine vinegar
2 tbsp sesame oil
1/2 tsp red pepper flakes
3 tbsp canola
1 tbsp olive oil
1 cup chopped broccoli
1 cup grated carrot
1/2 cup chopped peppers (red, green, mixed)
2 cups cooked rice noodles
Directions:
1- Add olive oil to a hot pan and cook the vegetables.
2-In a separate bowl, cook rice noodles.
3-Combine The remaining ingredients in a bowl. Add to rice noodles and combine.
4-Put soaked noodles in bowls. Top with cooked vegetables
(note, as you can see in the picture below I added the sauce and the noodles to the veggies which made the veggies lose their pretty colour. Next time I’ll just add them on top of the noodles then mix them while I eat!)

yes!! easy to make it non-veg, even salmon would work!
