Sometimes I bake for the sake of baking. My sweet tooth whispers ‘feed me’ and I give in.
A couple of weeks ago I was craving butter tarts. Typically, pastry and I don’t get along as well as I’d like, so I figured a butter tart square would be the happy compromise.
A quick internet search later and I found this Joy of Baking recipe.
I swapped out the corn syrup and replaced it with maple syrup. I also used Camino’s Muscavado brown sugar which is dark and has a strong molasses flavour. The squares were a huge success!

And I am totally making these too! Because next to sugar pie, butter tarts are my “last meal desert”. you know, if you were on deal row and they offered you any food as your last meal. These would be on the list!
