When we visit my Mother in Law in the summer, we always end up having a fire outside, roasting hot dogs and marshmallows, and eating until we are beyond stuffed. My Mother in Law is an excellent cook.
Because we end up eating outside a lot, and having simple (but delicious) buffet menu options available in the fridge for quick meals and as left overs. These are mostly salads. Potato salad, macaroni salad and a cottage cheese ‘salad’ side dish are almost always available.
Now, I’m a fan of cottage cheese just as it is. For lunch I’ll often have a bowl of cottage cheese with some fruit. In high school, it was one of my go-to bed time snacks. So selling me on cottage cheese as a side dish was not problem. She uses onions and tomatoes plus lots of fresh pepper to make a really great side dish. I love it at home because I can whip it up in minutes and have it in the refrigerator for lunches and supper during the summer months when anything quick is essential.
This recipe is beyond easy and you can mix it up however you want – instead of red onions, use green onions. Add in cucumbers if you want. Get creative!

Cottage Cheese Side Dish:
Ingredients:
About 1/4 cup Chopped red onions
1/3 cup Sliced tomatoes (bite site pieces – I used cherry tomatoes)
1 Container Gay Lea Cottage Cheese
Pepper to taste
Directions:
Combine ingredients and serve cold.

I’m not a big fan of cottage cheese and embarrassed to say the only way I eat it is in lasagna. It is simply not something that I was ever exposed to and therefore never used it in my cooking. I might just have to try your recipe!
I’m hot and cold with cottage cheese (and yogurt). I’ve never had it with fresh veggies before but I’m salivating as I’m typing this so I’ll willing to give it a try. My kids love it straight up and I love offering them healthy choices. Thanks for sharing and hosting the change to win.

We use it in lasagna all the time. I also like to mix it with some fresh pineapple for a quick snack.

I love cottage cheese but the only way I’ve ever eaten it is by itself. I’d heard of adding sweet fruits but never tomatoes or onions. Looks delicious. Can’t wait to give it a try.
