The spring and summer is the ultimate in on-the-go activities for us. Many evenings are rushed. We have to get the kids to a sporting event, or something last minute comes up and supper planning goes out the window. Plus, with the kids being home all day now for summer holidays, easy, and quick, lunchtime recipes are a must. This is one that I made on the fly one night and yet it’s easily a favourite now: Baked Pizza Rolls!
These have become an easy recipe for me to make when we are in a rush. The weird thing is, my kids don’t eat them (yet). They prefer their pizza to be flat it seems, but I like to make them for my husband and I to eat after work/before a baseball game when we need a grab-and-go meal. Turns out, because of the way they are rolled, they are easy to eat with one hand – how’s that for multitasking?
Recipe: Baked Pepperoni Pizza Rolls
(note: I haven’t given exact measurements because the recipe can be adjusted to make 1 roll or 12, depending on what you need!)
Ingredients:
Tortillas
Pizza Sauce
Sliced Pepperoni
Shredded Mozzarella or pizza cheese
(yes! You can add your favourite all dressed pizza fillings too!)
Directions:
1- Lay out a tortilla. Add 2-3 tbsp of pizza sauce, spreading a bit.
2-Layer about 6 pieces of pepperoni across the middle. Top with cheese.
3-Roll each tortilla, closing the ends tightly.
4-Bake on a baking sheet at 400 degrees for 15-20 minutes, flipping them half way through. You want them crispy and browning!
5-Caution! The centres will be very hot! Enjoy!
