Recipe: Coconut Chocolate Chip Ice Cream

I scream, you scream, we all scream for ice cream!

Tell me as a parent you’ve said that at least once.  Isn’t it a requirement? ‘Tis the season where we eat far too much ice cream and make few apologies for it.  Ever since I got my own ice cream maker, I’ve been even more interested in creating tasty treats.

This recipe is so basic yet everyone really loved it.  With only four ingredients, there’s a chance you can make it right now!  The kids helped me make this one too!

Coconut Chocolate Chip Ice Cream

Recipe: Coconut Chocolate Chip Ice Cream

Ingredients
  • 1 regular sized can (or 2-3 small cans) coconut milk
  • 1/4 cup sugar
  • 1 tsp vanilla
  • 1/3 cup chocolate chips (mini would work best!)
  • toasted coconut – optional
Instructions
  1. In a small sauce pan warm the coconut milk and sugar until the sugar is dissolved.
  2. Add the vanilla.
  3. Let cool in the fridge.
  4. Add to your ice cream maker and churn as directed (about 20-30 minutes)
  5. Towards the end of churning, add chocolate chips until well mixed.
  6. Transfer to a freezer bowl.
  7. Let harden in the freezer until serving time.
  8. Top with toasted coconut (I didn’t do this, my kids would probably riot)
  9. Enjoy!
