Growing up, my dad always BBQed. And he’s probably the best at it. End of story. One of my favourite dishes he did was actually a side dish – easy potatoes cooked in foil. They were buttery, soft and delicious.
While we haven’t mastered everything on the BBQ, the easy potatoes are doable (even for a non-BBQer like me).
Mix them up with some red peppers or other veggies too if you like! Enjoy!
BBQ Potatoes
Ingredients:
4-6 small/medium washed potatoes
1/2 cup chopped green onions
3 tbsp butter
1 tbsp olive oil
salt and pepper
Directions:
In the bottom of a aluminum pan (pie plate) add 2 tbsp of butter and 1 tbsp olive oil.
Thinly slice the washed potatoes (I leave the peel on)
Layer the potatoes in the pan on top of the butter and oil.
When done layering, sprinkle the chopped green onions on top. Add a small amount of salt and a more generous amount of pepper. Top with the remaining tbsp of butter.
Cover with tin foil.
Cook on the BBQ on medium-high heat (whatever you are cooking your meat with!) for about 40 minutes, or until tender. While cooking, shake the pan to keep the potatoes from sticking.
Makes enough for about 2-3 people (or 2 adults, 2 small eaters)
