If you are like me, the cooler weather inspires you to create in the kitchen. I love cooking and baking when the season changes to Fall and since it’s apple season, inspiration can be found simply by looking to the trees – or at least, what’s hanging on them.
With Thanksgiving around the corner, it’s time to consider what’s going on your table this year. I whipped up an easy-to-make Sour Cream Apple Cinnamon cake that tastes like Autumn and would be a wonderful addition for your dessert for anyone who may not like – gasp- pumpkin pie.
This cake isn’t too sweet, but is full of flavours, making it the perfect bite with your coffee in the morning, or tea in the evening. Or in the afternoon. Or mid-morning, well, you get the point.

Sour Cream Apple Cinnamon Cake
- 1 cup flour
- 1 tsp baking soda
- 1.5 tsp cinnamon
- 1 egg
- 1 tsp vanilla
- 1/2 cup sugar
- 1/2 cup Gay Lea Gold Sour Cream
- 2 tbsp melted Gay Lea Salted Butter
- 2 apples, peeled, thinly sliced
- – Combine flour, baking soda and cinnamon. Sift well and set aside.
- -In a mixer, combine the remaining ingredients, except the apples.
- -Add the dry ingredients to the wet, and mix until just blended.
- -Gently fold in the apple slices.
- -Pour batter into a parchment lined 8×8 pan, spread evenly.
- -Bake at 375 degrees for about 40 minutes – until a knife comes out clean when tested, and the top is brown. Start checking at about 30 minutes.
- -Serve alone, with ice cream or caramel sauce.
