Recipe: Puff Pastry Cream Cheese and Pepper Pinwheels – #whatscooking

I’m not sure if I’ve made a typical meal in about 4 days.  At this time of year we suddenly find ourselves picking away at meals.  This isn’t a bad thing. I love a great buffet style meal.  It’s simple to make, can be planned ahead of time, and requires little attention to the stove top.

We entertain this time of year a lot, primarily just for play dates or quick get-togethers. We do host some major events with family and often do a buffet style with party appetizers, vegetable trays and quick bites.  Of course, I always have baking in the freezer. That’s a given.

Looking for an easy recipe that you can make at any time? This requires very little preparation or planning. I made it tonight knowing that my brother was coming over at the last minute and wanted something to snack on (and yes, this will be a part of our dinner.  This is the best way to eat!)

These pepper pinwheels smell amazing in the oven and taste even better.  No one needs to know they were this easy.

Ingredients:

1/2 cup cream cheese

1 cup shredded Tex-Mex Cheese

2 tbsp chopped green peppers

2 tbsp chopped red pepper (roasted or regular)

2 tbsp chopped green onion

1 sheet (1/2 package) puffed pastry

Directions:

Allow puffed pastry to come to room temperature.

In a bowl, blend the cream cheese, cheese, green peppers and onions until creamy.

Roll out the puffed pastry on a floured counter or board.  Spread the cream cheese mixture all across the middle as best you can. Top with the red peppers.

Roll the pastry and filling into a log shape, tucking the ends in as you go.

Slice about 1/2 inch thick and place on a baking sheet covered with parchment.

Bake at 400 degrees for about 20 minutes, or until they are browned, crispy and cooked through.

Serve and enjoy!
