My Favourite Recipes with Eggs

Tonight I am making simple egg sandwiches for supper. I’ve purchased fresh, bakery bread and the eggs are hard-boiled and ready to go.  It’s not an elaborate meal, but when served with some veggies and dip, it makes for a fresh bite on a sunny spring day.

We go through a lot of eggs around here. I bake with them, we cook with them, we send them in school lunches; the list goes on.
