Recipe: Not-so-boring roast beef – Beef and Avocado on Naan rounds

I love a great roast beef every so often. Not only is there something comforting about it (and it makes me nostalgic for my own childhood when Sunday night dinner meant a roast was often in the oven!) but also because one roast can last a few meals.

But aside from eating the roast beef the ‘usual’ way (slow roasted and sliced with some sides on the plate), I love mixing it up. This mini-dish is a new favourite.

Roast Beef and Avocado on Naan

Ingredients:

Shredded roast beef (about 1 – 1 1/2 cups)

1 avocado

1/2 tomato, diced

6 Small Naan rounds

Lime-Cream (to make lime cream, squeeze 1/3 lime into 1/3 cup mayo or sour cream. Add grated lime zest. Stir)

Directions:

Warm up the Naan in the oven.

Add a dollop of cream in the middle.

Top with shredded roast beef.

Add avocado pieces (divide the avocado into 6 parts, dice and scoop pieces out) and tomatoes.

Season with pepper. Drizzle more lime-cream over top. Enjoy!
