You know those meals you need to make really quickly because you are heading out the door for baseball with the entire family and your husband just has enough time to get home, sit to eat and change before you all have to go? You know those meals? I know them well, because that basically summarizes our spring.
Which is why I always have a few go-to quick and easy meals to make on the fly. This really simple flat bread is one of those meals that I love. It’s tasty and quick. Plus, I’ve served it up before when impromptu guests arrive on the weekend and I want to put out a little snack.
When a representative contacted me about trying out Renée’s products, I was happy to because I already had a few products in our fridge. While I love making homemade dressings, and have written about that often, I also buy a few to have at the ready. I like the ingredients in the Renée’s products, plus they are a Canadian company! Many of their dressings are gluten free and dairy free which also make them an easy addition for guests with allergies.
This simple recipe for flat bread pizza was a fluke that I made ages ago, but it’s long been a reoccurring dish. You can mix it up with whatever toppings you want. Use left over chicken from last night’s supper, add different cheeses or caramelized onions for tasty twist.
I like to cook it until the edges and bottom are starting to crisp, but the dough is still slightly soft.
I served a piece of pizza with a simple side salad topped with Renée’s Spanish Onion and Poppyseed dressing.

- 1 pre-made flat bread (or smaller, individual ones)
- Few tablespoons of Renée’s Mediterranean Greek Dressing
- Chopped roasted red peppers
- Chopped olives
- Goat Cheese
- Optional: Chopped spinach
- Brush dressing onto flat bread, then pour remaining bits over top.
- Add toppings. If using spinach, don’t add yet.
- Bake in the oven at 375 degrees directly on rack until the edges are browning and the cheese is melting. Bake until the flat bread is at your desired crispness.
- Remove from oven, add chopped spinach if you are using.
- Slice and serve!
