I haven’t made granola bars very often, mostly because I end up with granola rather than bars. But this recipe that I stumbled upon is a keeper!
It appears where I’ve been going wrong is that I should just leave them in the refrigerator. Easy enough! I changed the original recipe a bit and subbed in dates because I will basically eat anything that has a date in it.
We’re already out of the batch I made so we’ll be making them again. Enjoy!
Honey oat, date and almond granola bars
Ingredients:
2 1/2 cups large flake oats*
1/3 cup honey
1/4 cup butter
1/4 cup brown sugar
1 tsp vanilla
1/2 cup chopped roasted almonds
1/2 cup chopped pitted dates
Directions:
In a sauce pan combine the honey, butter, sugar and vanilla until mixed well and warmed.
In a separate bowl mix the oats, dates and almonds.
Combine the warm liquid mixture and dry mix.
In a parchment lined 8×8 pan, press the mixture firmly into the pan. It’s worth it to really press well!
Let cool in the fridge. Cut when firm. Store in an airtight container. Use parchment paper to prevent sticking.
*The original recipe called for toasted the oats first. I was lazy and didn’t and thought everything turned out really well! Next time I’ll also play around with combinations too. Maybe coconut and chocolate chip?
I have used a similar recipe in the past. I once substituted the butter for peanut butter. It was so good and the bars really held together!
