Sometimes, we over think things. What’s that you say? A parent, over think? NO WAY! I know, I know, it’s true.
When it comes to feeding the family we certainly do that. It’s a consistent stress point in many households – preparing meals that everyone will eat. Bonus points if no one complains. I’ve written before about tips to make meal time planning a bit more stress-free.
One of my ongoing tips is that simple is often better. We don’t always need to be fancy or experimental in the kitchen. Often, our favourite dishes are the ones that are quick, easy and full of flavour.
Take this mashed sweet potato side dish for example. Now, full disclosure, my kids don’t eat potatoes (which confuses me greatly) but for Andy and I, this is one of our favourite sides. It’s simple, easy and wonderfully healthy.
I usually pair it as a side dish with a roast or with fish.
Try it and see if you can convince the entire family to love it!
Sweet Potato Mash
Ingredients:
2-4 sweet potatoes (1 potato per person, about)
1 tbsp butter
Salt and pepper to taste
Directions:
1- Peel and cube the sweet potatoes.
2- Bring water in a pot to boil. Add potatoes and cook until soft.
3- Drain the water from the potatoes. Add butter, pepper and a small amount of salt. Mash with a potato masher until soft.
4- For a sweet variation, add a tsp or so of maple syrup!
