Let’s face it, with a toddler at foot, and now a nursing baby, I love me some easy recipes. This is a staple around here – the ingredients can always be kept on hand and since it’s done quickly I can get it to the dinner table super fast! Enjoy!
Mandarin Orange Chicken: Ingredients
-Boneless Chicken Breast, cooked and cubed (Tip: cook chicken breast ahead of time and have it cut up in the fridge or freezer for easy preparation!)
-1 can Mandarin Orange slices
-1 cup chicken or vegetable stock, or water
-1/2 cup orange juice (omit if you are out!)
-1 cup frozen beans (yellow, green or mix)
-2 tbsp Brown Sugar
-1 tbsp corn starch
-Jasmine Rice
Stove top Directions (scroll below for the oven directions):
1-Cube and cook chicken in large skillet or wok. Set aside. If using pre-cooked you have in the fridge or freezer, proceed immediately to step 2.
2-In skillet or wok, heat to a low boil the chicken stock, brown sugar, corn starch and mandarin slices.
3-Add frozen beans and chicken.
4-Simmer on medium-high until sauce thickens and frozen items heat through, about 20 minutes. Stir occasionally.
5-Cook rice as directed on package. Serve chicken/orange mix over cooked rice.
Avoid the stovetop!
Can’t stand at the stove with the kids asking you to play? Mix the orange slices, brown sugar, corn starch, orange juice and chicken stock together. Put cubed raw chicken breasts in casserole dish and pour sauce over top. Bake in oven at 400 degrees Celsius until chicken is cooked through. Serve over rice, and add a side of veggies.
