For years, I’ve seen recipes floating around that use chia seeds and strawberries to make a quick jam. I tell myself all the time that I want to learn to can food, make jams (like my grandmothers) and so on, and yet, I don’t. Quick jams? Now we’re talking.
I finally decided to try making a version for myself and oh my it turned out. You know how when berries start to turn in the fridge you pop them in the freezer to ensure they don’t go to waste? This is the perfect way to use them. This jam can make an appearance on my breakfast table any time.
Wildberry Chia Seed Jam
Ingredients:
1 cup frozen berries (I used a mix batch of blueberries, raspberries and blackberries)
1 tbsp honey (there is nothing better than local honey!)
1 tbsp chia seeds
Directions:
In a sauce pan, heat the frozen berries and honey until thawed and heated through, not boiling but hot. Mash them gently.
Once heated and mashed (about 10 minutes), shut off the heat and add the chia seeds. Stir well.
Set aside and let cool. Spoon into your container of choice.
