You know that I love easy recipes. Even though I like to experiment in the kitchen, eating tasty food that is easy to prepare is something that I savour. When it’s the middle of the week, I’m swamped with errands and family stuff, I just don’t want to over think dinner.
This recipe is a spin on other recipes I’ve made before and was developed by chance one day. It’s zesty, salty and yummy. If you want a twist, remove the potatoes and serve over cooked rice instead.

Chicken Slow Cooker Stew with Olives
Ingredients:
Chicken thighs (6) Preferably without the skin or bones but I’ve done it with both.
3/4 cup Greek salad dressing (I like Renees)
2 cups chopped potatoes
2 cups chopped carrots
1 small chopped onion
1/2 cup chopped roasted red peppers
1/3 cup chopped olives
Directions:
Layer in the slow cooker and cook until chicken is well done and veggies are soft (about 3-4 hours on high)
