I saw this Jamie Oliver website recipe for a one-pot pasta dish and it made me drool. It looked so delicious and flexible I bookmarked it to try sometime.
I finally gave it a shot last week, and let me tell you, this is a keeper. It’s so easy, in fact, that the next day I made a mini version just for myself for lunch.
Basically, you put a variety of ingredients into a large pan on the stove. Add dry pasta and enough water to soften the pasta. For the approximately 2 cups of dry pasta I used, I added 3 cups of water, plus another 1/2 cup towards the end when it wasn’t quite done. You can play around with it as need be. You cover and cook until the pasta is softened and the water absorbed.
I used fresh asparagus, spinach, sun dried tomato paste, pasta sauce, onions and penne and made a scrumptious, easy dish.

Looks like a tasty recipe. And what a great way to save on dishes to wash. Would be good for camping where you don’t have a water hookup.
This is a wonderful dish especially for kids to do when they are on their own. I use a can of diced tomatoes with the juice stead go water.
We tried Martha Stewarts version and were very happy with it. Simple too.
