This time of year, it’s the perfect time to bake with apples. I’m a fan of apple crisp especially, but once and a while, I crave something different. Like this twist on a grilled cheese sandwich that I made using apples? Maybe a twist on your regular french toast recipes like this peanut-apple french toast recipe?
This easy-to-make baked apple with cream cheese filling is yummy, satisfying and I made it for one, which means you can multiply the recipe or make a quick one for yourself. I won’t judge.
Baked Apple with Cream Cheese Filling
Ingredients:
1 Apple, cored and slightly hollowed out, but not to the bottom
2 tbsp Philedelphia Cream Cheese
1 tsp sugar
1/2 tsp vanilla
optional: candied pecans on top
Directions:
Preheat oven to 400 degrees.
Core and empty the apple slightly.
Combine cream cheese, vanilla and sugar in a bowl until well mixed.
Stuff the apple with the cream cheese filling.
Place in a muffin container. Bake for 20-25 minutes, until the cream cheese is beginning to brown and the apple is soft.
When done, let cool slightly and top with nuts (optional). The filling won’t be set like a typical cheesecake, it will be more silky and like pudding.
