When I was selected to participate in the Mom Central Canada and Black & Decker contest to create the Ultimate Sandwich with their new convection countertop oven I was thrilled. I love cooking and creating is most of the fun (well, eating too).
To enter I was given the convection countertop oven (a kitchen appliance I didn’t have if you can believe it!) and a gift card to buy supplies. The creating and executing was left to my imagination and taste buds!
The Black & Decker Convection Countertop Oven
First, a bit about the product. The Black & Decker Convection Countertop oven hasn’t been around long but has already found a place in my kitchen. Able to toast six pieces of toast at a time, it has replaced my four-slice toaster. Heating waffles for the kids or cooking small portions of food has been great – and much better than turning on the stove on hot days.

The Sandwich:
Since it’s summer, I wanted to create a sandwich with a tip-of-the-hat to some food I love to eat in the summer (and sometimes year round). One of my favourite meals to order at a restaurant or to make at home is a fish sandwich. I grew up with family who fished so had the fortune to enjoy fresh perch, typically pan fried. It holds a special, tasty place in my heart (and stomach) so I decided to work with it for this competition.
Now, I know that fish isn’t always high on everyone’s list, but perch is mild (I typically buy wild, ocean perch), is good for you and when on a crusty bun with delicious sauce it’s hard to beat!
I hope you enjoy the recipe as much as my taste testers did!
Perch on a Bun with chili-lime mayo and red cabbage slaw
Ingredients (2 sandwiches):
4 filets perch (de-boned)
2 whole wheat kaiser rolls
Sauce:
1/2 cup mayo
1 tsp chili powder
1.5 limes, juiced
1 tbsp chopped chives or green onion stalk
Red Cabbage Slaw
1 cup finely chopped red cabbage
1 tsp dijon mustard
1 tbsp apple cider vinegar
1.5 tsp sugar
Directions
In Convection Oven, place perch on baking tray and season with salt and pepper. Bake at 400 degrees for 15-20 minutes.
Meanwhile, mix ingredients for sauce. Set aside.
In mixing bowl, add dijon mustard, sugar and vinegar. Mix. Chop cabbage and add to the mixing bowl. Toss well to combine.
When fish is done baking, set aside on plate and cover with foil to keep warm.
Cut kaiser rolls in half and spread a small amount of butter. Add to Convection Oven and toast until they become crispy.
For each roll, assemble: Sauce, then fish, then slaw and if you like on the other half of the roll more sauce (I like a lot of sauce!)
